Sparks – Life’s Defining Moments

A synapse is the point of communication between one neuron and a neighboring neuron, muscle cell or gland cell. It is the site where virtually all important brain activity emerges. There are trillions of synapses in the brain: each one of our more than 100 billion neurons may be connected to hundreds of other cells by as many as 10,000 synapses. Together they form a complex and flexible instrument upon which the music of our thoughts, behaviors and feelings are composed.

When we learn something new, meet someone new, come to a vital time in our life, have a new experience and so on…these great moments literally “fire” in our brains and spark us with passion, excitement, learning and inspiration.

My play on this concept brings me to reference the “sparks” in our life that make us who we are today and who we have yet to become.

According to Dr. Phil, you can trace who you’ve become in this life to three types of external factors: 10 Defining Moments, Seven Critical Choices and Five Pivotal People.

We all know when we have a “spark” in life and moments we will always cherish and remember, they can even be small moments and seem less significant…but yet they linger on in our minds forever.  Sparks can be subtle, hidden and unspoken, but catch like wildfire in our lives.

I reference these moments as sparks because of various feelings for which I associate them. Perhaps a moment that lit a fire under me to turn over a new leaf, a moment where I saw the light and was moved into a more positive direction or a brief glimpse of a true miracle that made me become more thankful for life and those around me.

For some…these moments are bright, but they can also be very dark. When you are asked to define your character by one of your “defining moments,” perhaps it was something very dark indeed. An unfortunate diagnosis at the doctor’s office or a negative relationship can somehow turn us on our heels and make us go toward a different path in life.

Our character can be sculpted by how we turn even our most hopeless days into the dawn of a new beginning in which we can see our own personal world illuminate even brighter.

Our brain is sending these signals into our body and spirit every moment and shaping our future and how we will feel about tomorrow. Often times it is hard to control what we conclude in our snap judgments, but we can always control how they shape our new day.

Food Matters (more than you know!)

After many years of research, I thought I had food all figured out. I assumed the food pyramid we all grew up with was sufficient in my quest for good health. I referred to it as the “Common Sense” diet that consisted of lean proteins like chicken, fish and eggs along with a richness of cooked fruit and vegetables…aka…the ideal diet for a perfect mind, body and spirit.

So, then I watched Food Matters! Turns out…I was wrong! I know…I know! We all hear so many contradictions and we wonder what is right…what is wrong and WHY? I will sum it all up in two points. 1) Animal products (especially in this country) consist of dirty, nasty carcinogens. 2) Raw fruits and vegetables (uncooked and untreated – yes organic) should make up 60% of your diet! PERIOD!

Cancer, dementia, Alzheimer’s disease, strokes, high blood pressure, diabetes…all caused by choices that lie within our lifestyle…nutrition being #1. It is sad really. If only I had known and written this very blog 10 years prior…could I have saved my parents? Now, with this knowledge, can I save myself, my husband, my sister, my children….YOU?

Stress, cigarettes, alcohol, sun exposure and poor mental state are all huge culprits in damaging our health, but when you are trying to reach your health and fitness goals – nutrition is 80% of the battle. And, it makes sense…how many of us make the right decisions with what we put into our bodies…every time? Most of the time?

I urge you to watch Food Matters – buy it, rent it, NetFlix it, live it! It will be the best thing you ever did for yourself…and, please…believe in it!!!

Diseases cause cellular damage…cancer and dementia progress and grow over the course of our lives. Raw fruits and vegetables…in their most natural state and juiced…feed our cells directly and repair them like NO drug that has been or will ever be developed! These foods feed our mind and our bodies!

If you think your doctor will prescribe Vitamin C to cure your ills…well, think again! Doctors ARE NOT paid to make you healthy! They get paid to prescribe liver-toxic medication that will cause other problems. And, you will end up in their office…paying their fees….again!

Our ancient scholars knew all about good health and every doctor (ironically) must take the Hippocratic Oath – “Let Food be Thy Medicine and Medicine be Thy Food.” But, doctors don’t know a damn thing about nutrition! WOW! You don’t have to be sick…1/4 of what you eat keeps you alive and 3/4 of what you eat keeps your doctor alive! Change this now! Educate yourself and save your life! I am going to work on letting it save mine and the ones I love!

The Gospel According to Me

Music helps to define how you feel…the beat…the lyrics, and most importantly…the point in time it enters your life. Music is a feeling and feeds your soul. It can enhance your established mood or move you to a new one.

This list includes those that have been most hypnotic to me. They live in my heart, and in my mind and in my soul. So, as I sit here at 12:35 am on a Friday night, I think…why am I only reminded of love songs?

Why My Mother Loved the Evergreens

While growing up, my parents always planted evergreen trees. Long after my dad passed in 1993, my mother continued to plant them as an ode to my father. In the last apartment my mother lived in by herself, she planted an evergreen and cared for it every day…watering it…admiring it.

I never understood the connection between the love of the evergreen and my mother. After attending her funeral this weekend, I found out that my father had a fondness for the tree, so she always felt closer to him by planting them and watching them grow.

The evergreen never dies…the cold of the winter and the bitter winds of the plains never phase it. Every day, it continues to grow…toward the heavens, unchanged by the elements…its strength and vitality uncompromised. This spirit not only defined the love my parents had for each other, but further defined their hearts…and their energies.

Often times as we gaze alone, while we sit and we listen to the wind blow among the trees, we think of those we love, we feel the absence of their presence and we look at the stars and see the heavens and know…we are never alone. For the ones we lost….are just a prayer away.

Rest in peace…my mother and my father who are together again…I will always love you and your spirit shall outlast your passing, for I will love you for the rest of my life and always remember and cherish how you made me the person I am…limb for limb. You gave me life and watched me grow.

Our Vacation DESTINation!

Today I set sail to the open sea…
Beyond the horizon I planned to be…
Where sun rays could warm me…
And darkness not find me…
That is where I planned to be…
The sea…the sea…for my anniversary…

The call of the ocean is quite distinct. I had the opportunity to visit the Pacific as a child and the Caribbean for my honeymoon, but the gulf seas are now surfing through my memories. My husband and I just returned from a vacation in Destin, Florida and Biloxi, Mississippi where we celebrated our one year wedding anniversary. The sound of the waves, the painted sunsets and memorable experiences with great company will fill our memories forever. I have visited many unique places over the years, but these two destinations quickly made my list of most enjoyable.

We decided to drive to Destin so we could have the opportunity to stop in several places on the way including Biloxi…that I will describe as a quiet and sleepy casino town with amazing views, calm sea fronts and a sparkling skyline. A night on the town included stops at the Hard Rock Casino, the Beau Rivage and the Grand Casino where we stayed. All with great experiences, low-key atmospheres and good deals on just about everything. One night was simply not enough. The crowd there was older than I expected, but it gave way to a more laid-back experience at the black jack tables….long conversations and a true understanding of the culture in the area as the “Seafood Capital of the World.”

­­­­­­­­­­­­The next day, Destin welcomed us with breathtaking white sand beaches and an amazing million-dollar beach house we had rented that was filled with family, friends and fun! The wraparound beachside balcony with the gentle breeze was the perfect gathering spot. We spent a great deal of our time there cooking and enjoying drinks, talking about good times and making new ones. Oh…the new ones!!

The experience of lying on the beach, fishing for blue crabs in the ocean with our feet, finding treasures with a borrowed metal detector and spotting sharks and jellyfish caused us to lose track of time and cancel any spa trips or tee times. The setting of the ocean, watching children play and building sandcastles were all just too pleasant.

The night was just as fun as the day with impromptu bonfires on the beach, midnight football games and hours of laughing and talking. I spent renewable time with great people in my husband’s family that I had not met before, those I know well and all of which I can’t wait to see again!!

Oh, the ocean still beckons; reminding me of the times we all look forward to…where we leave our worries of work behind…where we feel free of stress and full of excitement. The days and nights are never long enough and although it just happened…it now seems so far away. Oh sea…oh sea…come back to me!

Top Ten Best Scary Movies (According to Me)

Scary movies are my favorite. I torture my husband with them, because he is not a fan. However, it does add to the cinematic fun to watch him shake his head and look at me every time something scares him, and then take a bathroom break to gently look behind the shower curtain for _________?

This blog is about the finer things, but art counts and movie genius is an art. So, naturally as a scary movie lover, I have been “dying” to write about my favorite horror productions. Some of these movies are truly lose-several-nights-of-sleep-scary, but some are just downright GOOD! I have watched so many scary movies in my day, so I truly believe I have a superior ability to separate the weak from the strong. So, if you are a fan too…please enjoy.

#10 – The Return of the Living Dead – This movie doesn’t just have some oddly scary moments, but it is FUNNY! “Be a man Frank!” I was really tempted to put a dozen “dead” movies on this list because zombies are my favorite, but I picked the one that was most entertaining on a two-tiered level.

#9 – The Silence of the Lambs – I got two words for ya – Anthony Hopkins. This man is a genius! The movie didn’t really scare me, but the story and the acting are amazing. I love psychological thrillers and after seeing this one I wanted to watch Manhunter with William Petersen from CSI. That one was tough to watch.

 #8 – Stir of Echoes – Not only did this movie combine my two favorite things; a great soundtrack spiked with horror, but it was eerie! My favorite parts are when Kevin Bacon goes under hypnosis. What a great tie in…combining the unknown with the unknown. Let’s just call it – the “grey” area.

#7 – Halloween – The theme song is like none other. It is a true classic! And, the best part is when Michael Myers sits up behind Jamie Lee Curtis as she slowly moves to leave the room. This is the part where…in a real situation; we would have played like Usain Bolt and exited like lighting.

#6 – The Descent – I have recently realized that I really like cave movies. This one is not only freaky, but the cave climbing and being trapped in pitch black with “beings” is enough to put you on the edge of your seat the WHOLE time! The first appearance of the “visitors” in the cave is the best part and when I saw it in theatres…it definitely got the best reaction!

#5 – The Exorcism of Emily Rose – Okay, no one believes me when I tell them what happened the first and only time I saw this movie. I had a DVD player that read “Hello” when you turned it on each time. After I played this movie, the “O” burnt out and it simply read “Hell.” I returned the movie and never allowed it in my house again.

#4 – What Lies Beneath – Not only did they get blockbuster actors for this movie in Michelle Pfeiffer and Harrison Ford, but the ending was amazing. And, the irony of a man being truly and completely “haunted” by his past…that; my friends is good movie making!

#3 – The Exorcist – I don’t really know if I believe people can become possessed by the devil, but man o man was this thing scary! The poor girl in the movie was so severely type cast; she will forever be the pea soup Linda Blair that could never do much else afterwards. That could have been the true curse.

#2 – The Fourth Kind – Oh my!! I will give this movie a rating of 48 hours on the “man hours” scale, meaning how many “man hours” of sleep I lost after watching it. I can’t say I believe in alien abduction either, but you better bet your Zzzzz’s if I woke up anywhere near 3:33 in the morning (when the aliens are supposed to come for you), I didn’t go back to sleep for a very long time. And, anything that doesn’t have to get past the deadbolt and the Doberman is not much fun to think about.

#1 – The Changeling – This movie was made in 1980 and starred George C. Scott. There weren’t any special effects or monsters and it didn’t need it. I read only recently it was loosely based on a true story about a man living in a mysterious mansion in Denver, Colorado. My very favorite part is the séance scene. It was very well done for a movie of its time!!! Chilling!! Magnificent!!! And, it stars one of the greatest actors of all time. It is an absolute must and truly my favorite scary movie of all time! “Joseph!”

An Evening at Joe T. Garcia’s

So, I like to consider myself a connoisseur of Mexican food. I have lived in Texas my entire life and it is one of my favorite types of cuisine. So, my husband and I were in Fort Worth last weekend and we just had to go see what all the hype was about at Joe T. Garcia’s. I have so many friends that love it and although the very long line to get in that day was daunting, we decided to take the plunge and check it out. I like to say “been there, done that” as much as possible. It just feels good!

The atmosphere was fun even in line…people were passing around pitchers of margaritas as they waited. We didn’t wait as long as it appeared we would even though we started well out into the parking lot. The sangria swirls (our drink of choice) were pretty good. However, I was comparing them to Gloria’s swirls that are not only outstandingly refreshing, but also very…well…potent!

The patio is wonderful, I have never seen such a large outdoor seating space in any restaurant of any city I have ever been. It has a true garden-feel with sculptures, water features and various types of seating areas including outdoor bars. It is a great place to have a wedding reception or large party.

After all of our initial impressions, our great waiter (Jimmy) and the atmosphere set…our taste buds were in full bloom. I was ready to dig into a plate of fajitas or enchiladas (the only two dishes they offer). I thought…great idea! What a hit! Do one thing, or eh….two things and do it well. My husband ordered the enchiladas and I ordered the combo fajitas so we could get a full representation of what they had to offer.

So, here is the tough part and I am sure many of my friends will be upset by this! But, after my first taste of the fajitas and sampling his enchiladas, it became clear that all the excitement has to be about the patio. The food was mediocre at best. The beef fajitas were better than the chicken, but honestly…they tasted like grandma’s pot roast that had been left in the crock pot too long. The enchiladas were a bit better, but not something that wraps lines around buildings. So, I was inclined to believe people really enjoy the atmosphere and it is simply a relaxing place to hang out and gather with friends.

But, honestly…I have to praise some of the best fajitas I have had in a casual environment and I wanted to tell everyone there that day to visit a Rosa’s Café when they get a chance and see if you ever go back to Joe T’s for the food alone. However, with the great company I had and the weather that day…it was enjoyable all in all. But, my palate was left terribly unsatisfied. I give the place 2 ½ out of 5 briquettes on the hot scale!
